Desenvolvimento de uma tecnologia de produção de iogurtes funcionais com leite de cabra contendo fibra Beta vulgaris e frutos de Vaccinium cylindraceum

No presente trabalho foi desenvolvido um iogurte funcional utilizando matériasprimas selecionadas e provenientes da RAA, destinado sobretudo a pessoas de terceira idade que geralmente apresentam maior risco de deficiências nutricionais do que os jovens e os adultos, acrescido às alterações fisiológicas associadas ao processo de envelhecimento. Nas várias formulações a estudar usou-se, como matéria-prima, o leite de cabra (considerado como um excelente alimento funcional comparativamente ao leite de bovino) enriquecido com outros ingredientes também potencialmente benéficos para a saúde humana: fibra edível total de beterraba sacarina (Beta vulgaris L.) açoriana ou inulina obtida de Cichorium intydus; polpa do fruto de Vaccinium cylindraceum (“mirtilo dos Açores”, conhecido por uva da serra) com propriedades antioxidantes; lactoalbumina ou soro seco de bovinos dos Açores, e aroma de morango. Foram produzidas oito formulações, cinco das quais foram submetidas a um painel sensorial, com idades na faixa etária a que se destina o produto, com o intuito de testar as suas características organoléticas (sabor, aroma, cor e aspeto) e a sua aceitação junto de potenciais consumidores, bem como a intenção de compra e preferência destes. Foi ainda: (i) determinado o teor proteico das formulações, (ii) estudado o seu período de conservação à temperatura de refrigeração, pela avaliação das propriedades organoléticas e (iii) determinado o perfil dos compostos voláteis (aromograma), e consequentemente das propriedades organoléticas das formulações, por SPME-GC (microextração em fase sólida acoplada à cromatografia de fase gasosa). […].ABSTRACT: […]. In this work we developed a functional yogurt using raw materials selected from the RAA, especially for elderly people who generally have a higher risk for nutritional deficiencies than younger adults, in addition to physiological changes associated with the aging process. In the various formulations of this study Goat's Milk (considered as an excellent functional food compared to bovine milk) was used as a raw material, and was supplemented with other ingredients that can also bepotentially beneficial for human health, such as: total fiber edible sugar beet açoriana inulin obtained from Cichoriu mintydus; pulp of a fruit (blueberry Azores) with antioxidant properties; lactalbumin or bovinedry serum from the Azores, and strawberry flavor. Eight formulations were produced, five of which were subjected to a sensory panel, aged according to whom the products was intended, in order to test their organoleptic characteristics (flavor, aroma, color and appearance) and its acceptance by potential consumers, as well as to measure their purchase intentions and preferences. From the study: (i) the protein content of the formulations were also determined (ii) the storage period refrigeration temperature for the product were also studied, through the evaluation of the yogurt’s organoleptic properties and (iii) the profile of volatile compounds (aromograma) were determined, and hence the properties of the organoleptic formulations were found by SPME-GC (solid phase microextraction coupled to gas chromatography). Atitudes face à adoção homoparental: um estudo comparativo entre estudantes do ensino superior portugueses e espanhóis

estudo comparativo entre estudantes do ensino superior espanhóis e portugueses, futuros
intervenientes nas áreas social, da saúde, educacional e jurídica.
A importância deste estudo comparativo prende-se com as diferenças a nível
legislativo nestes países, no que toca ao reconhecimento e direitos das famílias
homoparentais. Para tal foram apresentadas a 630 estudantes (272 portugueses e 358
espanhóis) vinhetas de situações-estímulo (adoção de uma criança por casais
homoparentais ou heteroparentais) num desenho experimental; aplicadas duas escalas
sobre as competências parentais e os resultados desenvolvimentais das crianças; e
colocadas algumas questões sobre relacionamentos interpessoais com este tipo de
famílias e formação académica sobre o tema. Os resultados revelaram que a amostra
espanhola denotou atitudes menos preconceituosas face à adoção homoparental do que a
amostra portuguesa. Globalmente, os estudantes que tiveram mais contacto interpessoal
com pessoas que se identificassem como gays/lésbicas/bissexuais revelaram atitudes
menos preconceituosas. O contacto com informação científica sobre a
homossexualidade durante o percurso académico teve influência significativa em
atitudes mais favoráveis à adoção homoparental. A nível do desenvolvimento infantil, a
amostra mostrou uma maior preocupação com a probabilidade de as crianças adotadas
por homossexuais virem a ser alvo de discriminação. Essa diferença foi significativa
também entre nacionalidades, onde a amostra portuguesa reportou uma maior
probabilidade percebida de discriminação. Os resultados foram posteriormente
discutidos à luz da literatura.This study has leaned on the attitudes over the homoparenthood in a comparative study
between Portuguese and Spanish college students from social, health, educational and
legal field of study.
The importance of this comparative study is related to the differences in a legislative
level in these countries, regarding to the recognition and rights of homoparenthood
families. For that were presented to 630 students (272 Portuguese and 358 Spanish)
vignettes of situations-stimulations (adoption of a child by couples from the same sex
and couples of different sex) in an experimental draw; with two scales applied about
parenting skills and the outcome of children developments; and placed some issues
about interpersonal relationships with this kind of families and academic formation
about this topic. The results revealed that the Spanish sample, denoted less
discriminating attitudes towards homoparental adoption, than the Portuguese sample.
Overall, students who had more interpersonal contact with people who identified
themselves as gay / lesbian / bisexual, showed less discriminating attitudes. The contact
with scientific information about homosexuality during the academic course had
significant influence on attitudes that turned to be more favorable to homoparental
adoption. In a development level, the sample showed a greater concern with the
probability of children adopted by homosexuals become discriminated against. This
difference was also significant between nationalities, where the Portuguese sample
reported a greater perceived discrimination probability. The results were subsequently

Intervenção na Criança com Perturbação do Espectro do Autismo na Educação Pré-Escolar
. O tema escolhido para esta investigação foca-se na intervenção na criança com Perturbação do Espectro do Autismo na Educação Pré-Escolar e o interesse por este tema partiu da experiência vivenciada em estágio, onde contatamos e trabalhamos com esta realidade em Jardim de Infância. A metodologia utilizada é de carácter qualitativa, mais especificamente, um estudo de caso. O presente estudo tem como objetivos gerais, aprofundar a problemática da Perturbação do Espectro do Autismo, percecionar os envolvimentos relacionais entre a família e os técnicos responsáveis pelo desenvolvimento de uma criança com esta problemática e implementar estratégias de intervenção no grupo onde está inserida. Foi no sentido de esclarecer todas as dúvidas acerca desta temática, que, além da pesquisa bibliográfica, efetuamos também vários inquéritos para poder recolher dados plausíveis. Estes inquéritos foram aplicados às educadoras de infância da instituição frequentada pela criança em estudo e à mãe desta, no sentido de aprofundar e recolher o máximo de informações sobre o caso em estudo, de percecionar a inclusão de crianças com Perturbação do Espectro do Autismo, as estratégias metodológicas utilizadas e as dificuldades sentidas pelos educadores na inclusão destas crianças. Os dados obtidos durante esta investigação permitiram compreender melhor a patologia da Perturbação do Espectro do Autismo e ao mesmo tempo, ter uma noção da realidade da inclusão das crianças autistas nos nossos Jardins de InfânciaThe chosen theme for this research focus on child intervention with autism spectrum disorder in pre-school education and the interest for this theme started from the lived experience in internship, where we have contact and work with this reality in kindergarten. The methodology used is qualitative in nature, more specifically, a case study. The present study has as general objectives, to deepen the problem of Autism Spectrum Disorder, perceive the relational involvements between the family and the technicians responsible for the development of a child with this problem and implement intervention strategies in the group where it’s inserted. It was to clarify all the doubts about this subject, that beyond the bibliographic research, we also conduct several surveys to be able to collect plausible data. These surveys were applied to early childhood educators from the institution, attended by the child in study and to his/her mother, in order to deepen and collect the maximum information about the case in study, of perceiving the inclusion of children with Autism Spectrum Disorder, to the methodological strategies used and the difficulties felt by the educators in the inclusion of these children. The results obtained during this investigation allowed a better understanding of the Autism Spectrum Disorder pathology anda t the same time have a sense of the reality of the inclusion of autistic children in our kindergarten
As disfunções temporomandibulares nos violinistas portugueses e a sua relação com a ansiedade do desempenho musical
Tese de mestrado, Medicina dentária, Universidade de Lisboa, Faculdade de Medicina Dentária, 2015Introdução: A prática profissional de violino tem sido associada a uma maior predisposição para o desenvolvimento de Disfunções Temporomandibulares (DTM). Dos possíveis fatores de risco envolvidos, tais como o trauma físico inerente à postura de prática e a presença de hábitos parafuncionais frequentes, considera-se também a ansiedade do desempenho musical (ADM), que tem demonstrado uma associação significativa com a ocorrência de lesões músculo-esqueléticas em instrumentistas. Objetivos: Esta investigação tem como principal objetivo averiguar a existência de uma associação entre a presença de DTM e o nível de ADM nos violinistas. Materiais e Métodos: Neste estudo observacional transversal, foram realizados inquéritos por questionário escrito a uma amostra de 93 violinistas profissionais ou semi-profissionais a atuar em Lisboa e arredores. Este teve em vista a recolha de dados relativos a sintomatologia de DTM (Índice Anamnésico de Fonseca), nível de ADM (Kenny Music Performance Anxiety Inventory, K-MPAI), tempo de prática instrumental, tipo de queixeira, sexo e idade dos participantes. Seguiu-se a análise estatística dos dados com recurso ao software IBM SPSS Statistics® 22. Resultados: Verificou-se uma associação estatisticamente significativa entre a presença de DTM e níveis elevados de ADM (p<0.001), sendo que o grupo dos violinistas mais ansiosos apresentava uma frequência de DTM 2.29 vezes superior à do grupo dos menos ansiosos. Conclusões: Há indicações de que o violinista com queixas de desordem temporomandibular e um nível elevado de ADM pode vir a beneficiar de estratégias direcionadas à diminuição da ADM, simultâneas a terapia para DTM.Introduction: Professional violin playing has been associated with a higher predisposition of developing temporomandibular dysfunction (TMD). Of the possible risk factors, such as physical trauma from the playing posture and the presence of parafunctional habits, music performance anxiety (MPA) also comes into consideration, as it has been associated with the ocurrence of playing related musculoskeletal disorders. Objectives: The main objective of this research is to to identify whether there is an association between the presence of TMD and the level of MPA in violin players. Materials and Methods: In this transversal observational study, 93 professional ou semi-professional violinists performing in Lisbon and outskirts completed a written questionnaire, which retrieved data related to TMD symptoms (Fonseca Anamnestic Questionnaire), MPA (Kenny Music Performance Anxiety Inventory, K-MPAI), instrument practice time, chinrest type, sex and age. Statistical analysis was carried outwith the IBM SPSS Statistics® 22 software. Results: There was a statically significant association between the presence of TMD and high MPA levels (p<0.001), with the most anxious violinists presenting 2.29 times higher TMD frequence than the least anxious players. Conclusões: The violin player with temporomandibular disorder related complaints and a high level of ADM might benefit from ADM treament interventions symultaneously to DTM therapy

Modelação estatística aplicada a dados cefalométricos
Introdução: Este trabalho teve por foco o estudo dos Modelos Lineares Hierárquicos
(HLM- Hierarchical Linear Model) Longitudinais, visando uma aplicação a dados reais de
especial interesse no âmbito da Saúde Pública. Estes modelos revelam-se de particular
importância em contextos que exigem flexibilidade no tempo, permitindo a modelação de
alterações não lineares e descontínuas no tempo, o tratamento de espaçamentos desiguais de
pontos de tempo, bem como situações desequilibradas quanto ao número de observações por
indivíduo. Os modelos longitudinais HLM são muitas vezes descritos como modelos de
curvas de crescimento e fornecem uma estrutura que incorpora variáveis em cada nível do
modelo.
No âmbito da etiologia dos problemas ortodônticos, o papel da via aérea no crescimento e
desenvolvimento das estruturas craniofaciais tem sido amplamente debatido na literatura
científica. Na aplicação a dados reais, foi explorada a modelação da inclinação mandibular
em indivíduos em crescimento, considerando como preditores outras características crâniofaciais, faríngeas e postura crânio-cervical.
Materiais e Métodos: Foram realizadas medições angulares, lineares e de área referentes à
maxila, mandíbula, postura crânio-cervical e via aérea superior, no pré-pico, pico e pós-pico
de crescimento em 157 teleradiografias de indivíduos sem historial de tratamento
ortodôntico. A inclinação mandibular (ML/NSL) foi ajustada em função de outras variáveis
craniofaciais através de um modelo linear hierárquico (MLH) longitudinal. Foram avaliados
os pressupostos de linearidade, homocedasticidade e normalidade dos resíduos nas diferentes
hierarquias dos modelos, seguindo-se a pesquisa de observações influentes.
Resultados: O ajustamento do modelo nulo indicou que 72,6% da variabilidade de ML/NSL
pode ser explicada pela variância between-person, sendo relativamente estável ao longo do
tempo. Foram obtidos dois ajustamentos relevantes com intercepts e declives aleatórios para
a variável tempo. O ajustamento com MLH permitiu estimar componentes fixas e aleatórias
ao nível do indivíduo, assim como ao nível do instante temporal para ML/NSL. Permitiu
ainda estimar a influência de determinados preditores na taxa de variação de ML/NSL ao
longo do crescimento. Conclusões: Não foi encontrada uma relação significativa entre as dimensões sagitais da via
aérea e a inclinação mandibular, considerando dois ajustamentos de regressão multinível
aplicados a três instantes relevantes do crescimento. Recomenda-se a aplicação de técnicas
de modelação multinível que permitam incorporar as alterações fisiológicas das dimensões
faríngeas ao longo do crescimento e, assim, esclarecer melhor o papel da via aérea no
desenvolvimento das estruturas craniofaciais.Introduction: This work focused on the study of Longitudinal Hierarchical Linear Models
(HLM- Hierarchical Linear Model), aiming at an application to real data of special interest
in public health. These models are particularly important in contexts that require flexibility
in time, allowing the modeling of non-linear and discontinuous changes in time, the
treatment of unequal spacing of time points, as well as unbalanced situations regarding the
number of observations per individual. Longitudinal HLM models are often described as
growth curve models and provide a framework that incorporates variables at each level of
the model.
In the context of the etiology of orthodontic problems, the role of the airway in the growth
and development of craniofacial structures has been widely debated in the scientific
literature. In the application to real data, the modeling of mandibular inclination in growing
individuals was explored, considering as predictors other craniofacial and pharyngeal
characteristics and craniocervical posture.
Materials and Methods: Angular, linear and area measurements were performed
concerning the maxilla, mandible, craniocervical posture and upper airway at pre-peak, peak
and post-peak cephalograms in 157 individuals with no history of orthodontic treatment.
Mandibular inclination (ML/NSL) was adjusted as a function of other craniofacial variables
using a longitudinal hierarchical linear model (MLH). The assumptions of linearity,
homoscedasticity and normality of residuals from different levels were evaluated, followed
by the appraisal of influential observations.
Results: The null model adjustment indicated that 72.6% of ML/NSL variability can be
explained by the between-person variance, which indicates it is relatively stable over time.
Two relevant adjustments with random intercepts and slopes were obtained for the time
variable. Modelling with MLH allowed for the estimation of fixed and random components
at the individual level, as well as at the time level for ML/NSL. The influence of certain
predictors on the rate of change of ML/NSL throughout growth was also estimated.
Conclusions: No significant relationship was found between the sagittal dimensions of the
airway and mandibular inclination, considering two multilevel regression adjustments
applied to three relevant moments of growth. The application of multilevel modeling techniques is recommended to allow the incorporation of physiological changes in
pharyngeal dimensions during growth and, thus, better clarify the role of the airway in the
development of craniofacial structures
Atitude dos enfermeiros : a importância da família no cuidar
Enquadramento: O Enfermeiro dos cuidados de saúde primários surge como figura
principal no estabelecimento de uma relação de proximidade, segurança e confiança entre o
indivíduo/família e os serviços de saúde, sendo ele próprio, pela sua formação e dedicação,
quem assegura a manutenção dos serviços. Na perspetiva da continuidade de cuidados, a
família surge tanto como contexto de prestação de cuidados, como fonte de suporte e
recurso refletindo-se, a sua inclusão nos cuidados, na eficácia das intervenções de
enfermagem.
Objetivos: Identificar a atitude dos Enfermeiros dos CSP na importância da família no
cuidar; verificar se a atitude dos Enfermeiros é influenciada pelas variáveis
sociodemográficas, profissionais e pela competência emocional.
Métodos: Estudo quantitativo, descritivo-correlacional e transversal com participação de 71
Enfermeiros de um Agrupamento de Centros de Saúde da região Centro, com predomínio
do grupo etário 40 - 49 anos e do género feminino (91.5%) O instrumento de colheita de
dados inclui um questionário sociodemográfico e profissional, a Escala A Importância das
famílias nos cuidados de Enfermagem: Atitude dos Enfermeiros - IFCE-AE e a Escala Veiga
de Competência Emocional - EVCE.
Resultados: Os Enfermeiros que consideram a Família: parceiro dialogante e recurso de
coping (atitude mais favorável) são do género masculino, com idade entre os 40 e os 49
anos, solteiro, divorciado ou viúvo, e detentor de uma especialidade. Possui a categoria
profissional de Enfermeiro (generalista), com um tempo de serviço igual ou superior a 21
anos, exerce funções na Unidade de Saúde Pública e tem formação em Enfermagem de
família. Apresenta competência emocional normal. Os Enfermeiros mais jovens, sem
formação em Enfermagem de família e com competência emocional diminuída são os que
entendem a Família: como um fardo.
As variáveis sociodemográficas não interferem na atitude dos Enfermeiros. Das variáveis
profissionais, apenas o tipo de unidade onde exercem funções influencia a atitude dos
Enfermeiros. A competência emocional interfere na atitude dos Enfermeiros, sendo preditora
das dimensões Família: parceiro dialogante e recurso de coping e Família: recurso nos
cuidados de enfermagem. A capacidade Empatia revelou-se preditora da importância da
família no cuidar (nota global).
Conclusão: Os Enfermeiros dos CSP apresentam uma atitude favorável quanto à
importância da família no cuidar. Quanto melhor a competência emocional mais favorável é
a atitude dos Enfermeiros. Face aos resultados expostos concluindo-se a importância de
dotar os profissionais de competências emocionais para perceber a família como unidade e
recurso.

Framework: The Primary Care Nurse emerges as the main figure in establishing a
relationship of closeness, security and trust between the individual / family and the health
services, being himself, through his training and dedication, who ensures the maintenance of
the services. In the perspective of continuity of care, the family emerges as much a context
of care, as a source of support and resource reflecting itself, its inclusion in care, and the
effectiveness of nursing interventions.
Objectives: Identifying the attitude of Primary Care nurses in the importance of family on
care; Verifying if sociodemographic, professional variables and emotional competence
influence the attitude of nurses.
Methods: A quantitative, descriptive-correlational and cross-sectional study with the
participation of 71 nurses from a grouping of health centers in the central region, with a
predominance of the age group 40-49 years and the female gender (91.5%). The data
collection instrument includes a questionnaire Sociodemographic and Professional Scale
The Importance of Family in Nursing Care: Nurses' Attitude - IFCE-AE and the Veiga
Emotional Competence Scale - EVCE.
Results: Nurses who consider the Family a dialogue partner and a coping resource are the
male, aged 40 to 49 years old, single, divorced or widowed, with a specialty. She has the
professional category of Nurse (generalist), with a period of service equal or superior to 21
years, works in the Public Health Unit and has training in Family Nursing. Has normal
emotional competence. The youngest nurses, without training in family nursing and with
diminished emotional competence are those who understand the Family: as a burden.
Sociodemographic variables do not interfere with the Nurses' attitude. Of the professional
variables, only the type of unit where they perform functions influences the attitude of the
Nurses. Emotional competence interferes with the attitude of nurses, being a predictor of the
dimensions Family: dialoguing partner and coping resource and Family: resource in nursing
care. Empathy capacity proved to be a predictor of the family's importance in caring (global
score).
Conclusions: The Primary Care Nurses present a favorable attitude regarding the
importance of family on care. The better emotional competence the most favorable is the
attitude of the Nurses. In view of the results, we conclude the importance of providing
professionals with emotional skills to perceive the family as a unit and resource.

Concorrência e evasão fiscal internacional
Mestrado em Contabilidade - FiscalidadeA presente dissertação tem como objetivo, compreender o que se entende por dupla tributação internacional e concorrência fiscal prejudicial, e perceber em que medida estas tem influenciado as reformas fiscais ao nível da OCDE (Organização para a Cooperação e Desenvolvimento Económico). Identificar os critérios utilizados para a qualificação de determinado país ou território de paraíso fiscal ou regime fiscal privilegiado, bem como, conhecer as principais medidas, levadas a cabo pela OCDE e pela União Europeia, no sentido de regular/combater a concorrência fiscal prejudicial. Nomeadamente, o Código de Conduta da fiscalidade das empresas e o Relatório do Comité dos Assuntos Fiscais sobre a Concorrência Fiscal, e o papel do Fórum para as práticas fiscais prejudiciais. É também objetivo deste estudo, evidenciar as principais formas de utilização dos paraísos fiscais e dos regimes fiscais privilegiados com vista à evasão fiscal, identificando-se de forma genérica as medidas de combate adotadas ao nível da OCDE e do sistema fiscal português. Por fim, pretende-se compreender em que medida podem os benefícios fiscais causar distorções à concorrência fiscal internacional, fazendo-se, em particular, referência a dois regimes portugueses, o Código Fiscal ao Investimento e o Centro Internacional de Negócios da Madeira.The present dissertation aims to understand what is meant by double taxation and harmful tax competition and try to understand to what extent this has influenced the tax reforms within the OCDE. Identify the criteria used to qualify a specific country, tax heavens or beneficial tax regimes as well as to know the main measures carried out by the OCDE- Organization for Economic Co-operation and Development and the European Union in an effort to regulate / fight the harmful tax competition, namely the Code of Conduct for Business Taxation, the Report of the Committee on Fiscal Affairs on tax competition and the role of the forum for harmful tax practices. It is also the purpose of this study, to point the main ways of using the Tax Havens as well as the Preferential Tax Regimes, towards tax evasion, identifying the generic measures adopted by the OCDE and the Portuguese Tax System. Finally we intend to understand to what extent the fiscal benefits can cause distortions to the international fiscal competition, making, particularly reference to two Portuguese regimes, O Código Fiscal ao Investimento and Centro Internacional de Negócios da Madeira
Global characterization of the Quercus suber ectomycorrhizal transcriptome using 454 pyrosequencing
In temperate forests, trees live in symbiosis with fungi and depend on them for their survival.
Species from the Fagaceae family, including oaks, establish a symbiotic relationship in their roots with basidiomycetous fungi, called ectomycorrhizas (ECM). ECM symbiosis is essential for the life and health of trees in temperate and boreal forests where it plays a major role in nutrient cycling and in functioning of the forest ecosystem. Trees with well developed ECM root tips are more tolerant to environmental stresses, such as drought, and iotic stresses such as root pathogens. There is a general agreement that ECM fungi increase plant survival and productivity. Cork oak is well adapted to water scarcity typical of the Mediterranean summer, due to a root system that can reach several metres in depth, and to the abundance
of roots at the soil surface associated with ECM. The development of ECM symbiosis is characterized by the successive development of three structural components: a mantle of fungal tissue that encloses the root, the intraradical network of hyphae (Hartig net), where plant and fungus exchange metabolites, and the extraradical mycelium, which extends into the soil and is responsible for nutrient and water uptake. All these processes are highly regulated and are accompanied by alterations on gene expression in both partners. The current project is integrated in the effort for covering the transcriptome of Quercus suber and is focused on the identification of ESTs involved in the development of ECM symbiosis in cork oak. Since only 236 ESTs from Quercus suber are currently known, the use of genomics approaches for gene discovery or functional studies is far from being achieved for this plant species.This work was supported by the FCT project SOBREIRO/0034/200
